- 2 lbs beef chuck roast, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 8 oz egg noodles
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- 2 tbsp butter
- Fresh parsley for garnish

- Place beef, onion, garlic, beef broth, Worcestershire sauce, thyme, salt, and pepper into the slow cooker.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is tender.
- Remove beef and shred it with forks, then return to the slow cooker.
- If desired, mix cornstarch with water and stir into the gravy to thicken. Cook 10–15 minutes more.
- Cook egg noodles according to package instructions and toss with butter.
- Serve shredded beef and gravy over the noodles and garnish with parsley.
Notes
You can add carrots or mushrooms for extra flavor. This dish reheats well for leftovers and can also be served over mashed potatoes.
