- 2–3 lbs beef chuck roast or lamb shoulder
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups beef or lamb broth
- 1 cup Irish stout beer
- 2 tbsp tomato paste
- 3 large carrots, chopped
- 2–3 potatoes, chopped
- 2 tsp fresh thyme leaves
- 1 tsp fresh rosemary, chopped
- 1 bay leaf

- Season meat generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear meat on all sides until browned. Transfer to slow cooker.
- In the same skillet, sauté onion and garlic until soft. Stir in tomato paste, then add broth and stout. Bring to a simmer.
- Pour liquid over meat in slow cooker. Add carrots, potatoes, thyme, rosemary, and bay leaf.
- Cover and cook on low for 7–8 hours or high for 4–5 hours, until meat is tender and falls apart easily.
- Remove bay leaf before serving. Serve meat with vegetables and pan juices.
Notes
For extra flavor, marinate the meat in stout and herbs overnight. Leftovers taste even better the next day.
