Ingredients

  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking for 2–3 minutes until softened.
  2. Add carrots, celery, bell pepper, and cabbage. Stir and cook for 5 minutes.
  3. Pour in diced tomatoes and vegetable broth. Add oregano, basil, red pepper flakes, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
  5. Adjust seasoning to taste before serving.
