Ingredients

- 1 medium head green cabbage, chopped
- 1 large onion, diced
- 3 garlic cloves, minced
- 3 medium carrots, sliced
- 3 celery stalks, chopped
- 1 green bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking for 2–3 minutes until softened.
- Add carrots, celery, bell pepper, and cabbage. Stir and cook for 5 minutes.
- Pour in diced tomatoes and vegetable broth. Add oregano, basil, red pepper flakes, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
- Adjust seasoning to taste before serving.
Notes
This soup is naturally low-calorie and great for meal prep. For extra protein, add white beans or shredded chicken.
