- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs

- Mix dry ingredients: In a bowl, whisk together flour, baking powder, and salt.
- Cream butter and sugar: In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well. Stir in vanilla extract and optional food coloring.
- Gradually mix in dry ingredients until a soft dough forms.
- Shape cookie log: Divide dough in half and shape each portion into a log about 2 inches in diameter. Wrap tightly in plastic wrap and refrigerate for at least 2 hours or until firm.
- Preheat oven: Preheat to 350°F (175°C). Line baking sheets with parchment paper.
- Slice and bake: Slice chilled logs into 1/4- to 1/2-inch thick rounds and place on prepared baking sheets. Bake 10–12 minutes, until edges are lightly golden.
- Allow cookies to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Decorate: Optional: add sprinkles, sanding sugar, or drizzle with melted chocolate once cooled.
Notes
For perfectly uniform cookies, chill the dough thoroughly before slicing. These cookies can also be frozen as logs before baking for future use.
