- 4 cups chopped rhubarb (about 1 lb)
- 1 1/2 cups granulated sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
Instructions
- Prepare Rhubarb: Wash and chop rhubarb into small pieces.
- Cook Ingredients: In a large saucepan, combine rhubarb, sugar, cinnamon, nutmeg, lemon juice, and salt. Cook over medium heat, stirring frequently, until the mixture thickens and rhubarb is soft, about 25-30 minutes.

- Cool and Store: Let cool completely, then transfer to sterilized jars. Store in the refrigerator for up to 2 weeks or freeze for longer storage.
