- 1 large egg

- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg (optional)
- 1/4 teaspoon salt
- 1 medium apple, peeled and finely diced
Instructions
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the finely diced apple.
- Scoop tablespoon-sized portions onto the baking sheet.
- Bake for 10–12 minutes, or until lightly golden around the edges.
- Cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
Notes
Use firm apples like Honeycrisp or Granny Smith for the best texture. For extra flavor, sprinkle cinnamon sugar on top before baking. Store cookies in an airtight container for up to 4 days.
