- 1 lb boneless, skinless chicken breast or thighs, diced
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp crushed red pepper flakes (optional)
- 1 cup small pasta (orzo, ditalini, or shells)
- Salt and black pepper, to taste
- Optional garnish: grated Parmesan, fresh parsley

- Heat olive oil in a large pot over medium heat. Add chicken and cook 4–5 minutes until lightly browned. Remove and set aside.
- Add onion, garlic, carrots, celery, and zucchini; sauté 5 minutes until softened.
- Stir in diced tomatoes, chicken broth, oregano, basil, and red pepper flakes. Bring to a boil, then reduce heat and simmer 10 minutes.
- Add the chicken back to the pot and simmer 5–10 minutes more until fully cooked.
- Stir in pasta and cook according to package instructions until al dente.
- Season with salt and black pepper. Serve hot, garnished with Parmesan or fresh parsley if desired.
Notes
For extra flavor, add a splash of white wine when sautéing the vegetables. This soup freezes well for easy make-ahead meals.
