Description

Spooky and delicious, these Halloween-style stuffed peppers are filled with shredded chicken, rice, and savory seasonings. Perfect for a festive, healthy dinner!


Ingredients

  • 4 large bell peppers (red, yellow, or orange)
  • 2 cups cooked shredded chicken
  • 1 cup cooked rice
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • Salt to taste
  • Optional: Halloween-themed toppings (sliced olives for eyes, ketchup for ‘blood’)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off bell peppers and remove seeds and membranes.
  3. In a large bowl, combine shredded chicken, cooked rice, onions, tomatoes, garlic, paprika, salt, and pepper.
  4. Stuff each pepper with the chicken and rice mixture.
  5. Place stuffed peppers in a baking dish and sprinkle with shredded cheese on top.
  6. Bake for 25–30 minutes, or until peppers are tender and cheese is melted.
  7. Optional: Decorate with olives or drizzle ketchup for a spooky Halloween effect.

Notes

Use different colored bell peppers to create a fun Halloween display. You can also prepare ahead and bake just before serving.
