- 4 large bell peppers (red, yellow, or orange)
- 2 cups cooked shredded chicken
- 1 cup cooked rice
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp black pepper
- Salt to taste
- Optional: Halloween-themed toppings (sliced olives for eyes, ketchup for ‘blood’)
Instructions
- Preheat oven to 375°F (190°C).
- Cut tops off bell peppers and remove seeds and membranes.
- In a large bowl, combine shredded chicken, cooked rice, onions, tomatoes, garlic, paprika, salt, and pepper.
- Stuff each pepper with the chicken and rice mixture.
- Place stuffed peppers in a baking dish and sprinkle with shredded cheese on top.
- Bake for 25–30 minutes, or until peppers are tender and cheese is melted.
- Optional: Decorate with olives or drizzle ketchup for a spooky Halloween effect.
Notes
Use different colored bell peppers to create a fun Halloween display. You can also prepare ahead and bake just before serving.
