  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 2 cups prepared mashed potatoes (store-bought or homemade)
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tbsp butter, for dotting on top

  2. Cook meat: In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess fat.
  3. Add veggies & seasonings: Stir in frozen vegetables, tomato paste, Worcestershire sauce, salt, pepper, and thyme. Cook 3–5 minutes until combined and heated through.
  4. Assemble: Transfer meat mixture to a greased 9×9-inch baking dish. Spread mashed potatoes evenly over the top.
  5. Sprinkle shredded cheddar on top and dot with butter.
  6. Bake: Bake uncovered for 20–25 minutes until top is golden and bubbly.
  7. Serve: Let rest 5 minutes before serving. Enjoy warm.

Notes

You can make this ahead and refrigerate, then bake before serving. Swap ground beef with ground turkey or lamb for variation. Add a dash of paprika on top for extra color.
