- 1 lb ground beef or lamb
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 cup frozen peas
- 3 cups potatoes, peeled and diced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and black pepper, to taste
- Optional: chopped parsley for garnish

- Heat olive oil in a large pot over medium heat.
- Add ground beef or lamb and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Add onion, carrots, and garlic; cook 4–5 minutes until softened.
- Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Add potatoes and beef broth. Bring to a boil.
- Reduce heat and simmer 20–25 minutes until potatoes are tender.
- Stir in peas and simmer 5 minutes.
- Taste and adjust seasoning. Serve hot, garnished with parsley.
Notes
For extra creaminess, mash some of the potatoes directly in the pot or stir in a splash of cream. This soup thickens as it sits.
