  • 1 cup frozen peas
  • 3 cups potatoes, peeled and diced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and black pepper, to taste
  • Optional: chopped parsley for garnish

  2. Add ground beef or lamb and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Add onion, carrots, and garlic; cook 4–5 minutes until softened.
  4. Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  5. Add potatoes and beef broth. Bring to a boil.
  6. Reduce heat and simmer 20–25 minutes until potatoes are tender.
  7. Stir in peas and simmer 5 minutes.
  8. Taste and adjust seasoning. Serve hot, garnished with parsley.

Notes

For extra creaminess, mash some of the potatoes directly in the pot or stir in a splash of cream. This soup thickens as it sits.
