  • 1 1/2 lbs boneless skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Salt & pepper, to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 4–6 pita breads, warmed
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • Herby Ranch:
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 clove garlic, minced
  • 1–2 tbsp lemon juice
  • Salt & pepper, to taste

Instructions

  1. Preheat the oven to 425Β°F (220Β°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the sliced chicken with olive oil, garlic powder, smoked paprika, oregano, salt, and pepper.
  3. Spread the chicken evenly on the sheet pan.
  4. Add the sliced peppers and red onion around the chicken.
  5. Roast for 18–22 minutes, or until the chicken is cooked through and the veggies are tender.
  6. While the chicken cooks, whisk together all Herby Ranch ingredients in a small bowl.
  7. Warm the pita bread.
  8. Assemble the pitas with chicken, roasted veggies, lettuce, tomatoes, and cucumber.
  9. Drizzle generously with the Herby Ranch and serve immediately.
