- 1 1/2 lbs boneless skinless chicken breasts, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt & pepper, to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 4β6 pita breads, warmed
- 1 cup shredded lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- Herby Ranch:
- 1/2 cup mayonnaise
- 1/2 cup sour cream or Greek yogurt
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 clove garlic, minced
- 1β2 tbsp lemon juice
- Salt & pepper, to taste
Instructions
- Preheat the oven to 425Β°F (220Β°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the sliced chicken with olive oil, garlic powder, smoked paprika, oregano, salt, and pepper.
- Spread the chicken evenly on the sheet pan.
- Add the sliced peppers and red onion around the chicken.
- Roast for 18β22 minutes, or until the chicken is cooked through and the veggies are tender.
- While the chicken cooks, whisk together all Herby Ranch ingredients in a small bowl.
- Warm the pita bread.
- Assemble the pitas with chicken, roasted veggies, lettuce, tomatoes, and cucumber.
- Drizzle generously with the Herby Ranch and serve immediately.
