- 4–5 medium rainbow carrots, peeled and shaved
- 2 green onions, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp sesame seeds, toasted
- 1 tbsp rice vinegar
- 1 tbsp soy sauce or tamari
- 1 tsp sesame oil
- 1 tsp honey or maple syrup
- Salt and pepper, to taste

- Shave carrots using a vegetable peeler or mandoline. Place in a large bowl.
- Add sliced green onions and chopped cilantro.
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, and honey.
- Pour dressing over the carrot mixture and toss to coat evenly.
- Sprinkle with toasted sesame seeds and season with salt and pepper.
- Serve immediately or chill for 15–20 minutes to enhance flavors.
Notes
For extra crunch, add roasted cashews or slivered almonds. You can also mix in thinly sliced bell peppers for more color.
