- 4 cups thinly sliced potatoes (about 4–5 medium potatoes)
- 2 tbsp butter
- 2 cloves garlic, minced
- 2 cups whole milk or heavy cream
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme or rosemary (optional)
Instructions
- Preheat oven: Preheat oven to 375°F (190°C). Grease a baking dish.
- Make cheese sauce: In a saucepan, melt butter over medium heat. Add garlic and cook until fragrant. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk or cream until smooth. Cook until thickened. Stir in cheddar and Parmesan cheese until melted. Season with salt, pepper, and herbs.
- Assemble: Layer half of the sliced potatoes in the baking dish. Pour half the cheese sauce over the potatoes. Repeat with remaining potatoes and sauce.
- Bake: Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20-25 minutes until potatoes are tender and the top is golden brown.
- Serve: Let cool slightly before serving.
Notes
For a richer dish, use heavy cream. You can add cooked bacon or caramelized onions for extra flavor.
