This Savory Garlic Ice Cream is a surprising twist on a classic dessert. Made with roasted garlic, cream, and a touch of Parmesan, it’s rich, creamy, and perfect for pairing with savory dishes or serving as a conversation-starting appetizer.

- 2 heads garlic
- 1 tbsp olive oil
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup grated Parmesan cheese
- 4 large egg yolks
- 1/2 cup sugar
- 1/2 tsp sea salt
- Fresh herbs (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Slice tops off garlic heads, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and caramelized.
- In a saucepan, combine cream, milk, and roasted garlic cloves. Heat gently until steaming, then stir in Parmesan.
- In a bowl, whisk egg yolks and sugar until pale and thick. Slowly temper with warm cream mixture, whisking constantly.
- Return mixture to saucepan and cook over low heat, stirring, until custard thickens enough to coat the back of a spoon.
- Strain custard through a fine sieve, stir in salt, and chill completely.
- Churn mixture in an ice cream maker according to manufacturer’s instructions until smooth and frozen.
- Freeze for at least 4 hours before serving. Garnish with herbs if desired.
Notes
Serve as a daring appetizer, paired with roasted meats, or even as a side with spicy dishes. For a stronger flavor, use raw garlic instead of roasted (though roasted is more mellow).
