- 3–4 lb chuck roast
- 3 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 packet French onion soup mix
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)

- Heat olive oil in a skillet and sear the chuck roast on all sides.
- Place sliced onions and garlic in the bottom of the crock pot.
- Set the roast on top of the onions.
- In a bowl, whisk beef broth, French onion soup mix, Worcestershire sauce, thyme, and pepper.
- Pour mixture over the roast and top with butter.
- Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours until fork tender.
- Optional: Remove roast, mix cornstarch slurry into sauce, and cook 10 minutes to thicken.
- Serve roast sliced with onion gravy over mashed potatoes or rice.
Notes
For extra flavor, caramelize the onions in a skillet before adding to the crock pot. Leftovers make excellent sandwiches the next day.
