- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 package (20 oz) refrigerated cheese tortellini
- 2 cups fresh spinach
- Salt and black pepper, to taste
- Optional garnish: grated Parmesan cheese

- Heat olive oil in a large pot over medium heat. Brown the Italian sausage, breaking it into crumbles. Drain excess grease if needed.
- Add onion and garlic; sauté 4–5 minutes until softened.
- Stir in Italian seasoning and red pepper flakes (if using).
- Pour in chicken broth and diced tomatoes. Bring to a boil.
- Add tortellini and cook according to package directions, about 4–6 minutes.
- Stir in spinach and cook 1–2 minutes until wilted.
- Season with salt and black pepper to taste.
- Serve hot with grated Parmesan cheese if desired.
Notes
For a creamier version, stir in 1/2 cup heavy cream at the end. Kale can be substituted for spinach for a heartier texture.
