Instructions
- Preheat oven to 400Β°F (200Β°C).
- Place diced sweet potatoes on a baking sheet and drizzle with olive oil, salt, and pepper; toss to coat.
- Roast for 20 minutes, stirring halfway through.
- While sweet potatoes roast, combine honey and minced garlic in a small bowl.
- After 20 minutes, remove sweet potatoes and drizzle honey-garlic mixture over them; toss to coat.
- Return to oven and roast an additional 10β15 minutes until tender and caramelized.
- Garnish with fresh parsley and serve warm.
