- 1 lb Italian sausage (mild or spicy), casings removed
- 1 tbsp olive oil (if needed)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups russet potatoes, peeled and diced
- 4 cups chicken broth
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1 cup heavy cream or half-and-half
- 2 cups fresh spinach or kale
- Optional garnish: crispy bacon, shredded cheese, green onions

- In a large pot over medium heat, brown the sausage until cooked through. Drain excess grease if needed.
- Add onion and garlic; sauté 4–5 minutes until softened.
- Stir in potatoes, broth, Italian seasoning, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer 20–25 minutes until potatoes are fork-tender.
- Stir in cream and spinach or kale. Cook 2–3 minutes until greens are wilted.
- Taste and adjust seasoning. Serve hot with desired garnishes.
Notes
For a thicker soup, mash some of the potatoes in the pot. You can substitute smoked sausage for a deeper flavor.
