This Sausage & Peppers Foil Pack is a simple, mess-free meal with bold flavor. Juicy sausage, colorful bell peppers, and onions roast together in foil for an easy grilling or oven-baking option that’s ready in under 30 minutes.

- 4 smoked sausages (or Italian sausages), sliced
- 2 bell peppers (any color), sliced
- 1 medium red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- Salt and pepper, to taste
- Optional: chopped fresh parsley, grated Parmesan, or red pepper flakes
- 4 large sheets of heavy-duty aluminum foil
Instructions
- Preheat Grill or Oven: Heat grill to medium-high or preheat oven to 425°F (220°C).
- Assemble Foil Packs: In a large bowl, toss sausage, peppers, and onions with olive oil, seasonings, salt, and pepper. Divide mixture evenly among the foil sheets and seal tightly to form packs.
- Cook: Place foil packs on grill or baking sheet. Cook for 18–20 minutes, turning halfway if grilling, until veggies are tender and sausage is heated through.
- Serve: Carefully open foil packs (watch for steam). Garnish with parsley, Parmesan, or red pepper flakes if desired. Enjoy hot!
Notes
Prep ahead for camping trips! For extra char, open foil packs during the last 5 minutes on the grill. Pairs great with rice, crusty bread, or pasta salad.
