  • 8 slices of white or brioche bread
  • 8 breakfast sausage links, cooked and cooled
  • 4 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Butter or cooking spray for greasing
  • Maple syrup for serving

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Using a rolling pin, flatten each slice of bread.
  3. Place one cooked sausage on the end of each bread slice and roll it up tightly, sealing the edges.
  4. In a bowl, whisk eggs, milk, vanilla, and cinnamon.
  5. Dip each roll-up into the egg mixture, coating evenly.
  6. Place on the prepared baking sheet and lightly spray or brush with butter.
  7. Bake 15–20 minutes, turning halfway through, until golden and cooked through.
  8. Serve warm with maple syrup for dipping.

Notes

These roll-ups can be assembled the night before and baked fresh in the morning. Swap sausage for bacon or ham, and add cream cheese or fruit preserves for variety.
