- 8 slices of white or brioche bread
- 8 breakfast sausage links, cooked and cooled
- 4 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Butter or cooking spray for greasing
- Maple syrup for serving

- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Using a rolling pin, flatten each slice of bread.
- Place one cooked sausage on the end of each bread slice and roll it up tightly, sealing the edges.
- In a bowl, whisk eggs, milk, vanilla, and cinnamon.
- Dip each roll-up into the egg mixture, coating evenly.
- Place on the prepared baking sheet and lightly spray or brush with butter.
- Bake 15–20 minutes, turning halfway through, until golden and cooked through.
- Serve warm with maple syrup for dipping.
Notes
These roll-ups can be assembled the night before and baked fresh in the morning. Swap sausage for bacon or ham, and add cream cheese or fruit preserves for variety.
