- 1 can (28 oz / 800 g) whole San Marzano tomatoes
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp sugar (optional, to balance acidity)
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp crushed red pepper flakes (optional)

- Prepare tomatoes: Drain canned tomatoes and crush them by hand or with a blender for a smooth sauce.
- Sauté garlic: In a saucepan, heat olive oil over medium heat. Add garlic and cook 30–60 seconds until fragrant, being careful not to burn.
- Simmer sauce: Add crushed tomatoes, salt, sugar, oregano, basil, and red pepper flakes. Stir well and bring to a gentle simmer.
- Cook: Simmer for 15–20 minutes, stirring occasionally, until slightly thickened.
- Use or store: Use immediately on pizza, or let cool and store in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
Notes
For extra flavor, add a splash of red wine or a pinch of fennel seeds while simmering. Adjust seasoning to taste.
