For the Salmon:

  • 2 salmon fillets (68 ounces each)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest

For the Pasta:

  • 8 ounces fettuccine or your favorite pasta
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Juice of 1 lemon
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

Preparing the Salmon:

  1. Season the salmon fillets with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  4. Place the salmon fillets in the skillet, skin-side down, and cook for 3-4 minutes until the skin is crispy.
  5. Carefully flip the salmon fillets and cook for an additional 3-4 minutes, or until the salmon flakes easily with a fork.
  6. Remove the salmon from the skillet, sprinkle lemon zest over it, and set it aside.

Making the Pasta:

  1. Cook the fettuccine or pasta of your choice according to the package instructions until al dente. Drain and set aside.
  2. In the same skillet used for the salmon, melt the unsalted butter over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in the heavy cream and stir, allowing it to simmer for 2-3 minutes until it slightly thickens.
  5. Stir in the grated Parmesan cheese until the sauce becomes creamy and smooth.
  6. Add the lemon juice, salt, and black pepper to taste. Adjust the seasoning as needed.
  7. Return the cooked pasta to the skillet and toss it in the creamy sauce until well coated.
  8. Slice the cooked salmon fillets into smaller pieces and gently fold them into the pasta.
  9. Heat the entire mixture for an additional 2 minutes, ensuring it’s heated through.
