  • 2 cups shredded rotisserie chicken
  • 2 cups sliced mushrooms (white or cremini)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tbsp butter or olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Optional: fresh parsley for garnish

  1. Sauté vegetables: In a large pot, melt butter over medium heat. Add onion and garlic and cook 2–3 minutes until softened. Add mushrooms and cook 5–7 minutes until tender and lightly browned.
  2. Add chicken & broth: Stir in shredded rotisserie chicken, chicken broth, and thyme. Bring to a gentle simmer for 10 minutes.
  3. Add cream: Reduce heat to low and stir in heavy cream. Heat through but do not boil.
  4. Season & serve: Add salt and pepper to taste. Garnish with fresh parsley if desired. Serve hot with crusty bread or crackers.

Notes

You can substitute half-and-half or milk for a lighter version. For added flavor, sprinkle a little grated Parmesan on top.
