- 2 cups shredded rotisserie chicken
- 2 cups sliced mushrooms (white or cremini)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- 2 tbsp butter or olive oil
- 1 tsp dried thyme
- Salt and pepper, to taste
- Optional: fresh parsley for garnish

- Sauté vegetables: In a large pot, melt butter over medium heat. Add onion and garlic and cook 2–3 minutes until softened. Add mushrooms and cook 5–7 minutes until tender and lightly browned.
- Add chicken & broth: Stir in shredded rotisserie chicken, chicken broth, and thyme. Bring to a gentle simmer for 10 minutes.
- Add cream: Reduce heat to low and stir in heavy cream. Heat through but do not boil.
- Season & serve: Add salt and pepper to taste. Garnish with fresh parsley if desired. Serve hot with crusty bread or crackers.
Notes
You can substitute half-and-half or milk for a lighter version. For added flavor, sprinkle a little grated Parmesan on top.
