- 1 large head of cauliflower, cut into florets
- 1 whole head of garlic
- 2 tbsp olive oil, divided
- 1 medium onion, chopped
- 4 cups vegetable or chicken broth
- 1 cup milk or half-and-half
- 1 1/2 cups sharp cheddar cheese, shredded
- Salt and black pepper, to taste
- Chopped chives or green onions (for garnish)
- Extra cheddar shreds, for topping (optional)
Instructions
- Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with 1 tbsp olive oil, wrap in foil, and roast for 35–40 minutes until soft and caramelized.
- Toss cauliflower florets with 1 tbsp olive oil, spread on a baking sheet, and roast alongside the garlic until golden and tender, about 25 minutes.
- In a large pot, sauté onion until softened. Add roasted cauliflower, squeezed roasted garlic cloves, and broth. Simmer for 10 minutes.
- Use an immersion blender to puree until smooth and creamy.
- Stir in milk (or half-and-half) and cheddar cheese until melted and incorporated. Season with salt and pepper to taste.
- Serve hot, garnished with chives and extra cheddar if desired.
Notes
For a smoky twist, try adding a pinch of smoked paprika or top with crispy bacon bits. This soup pairs beautifully with crusty bread or garlic toast.
