Description

Ingredients

  • 4 medium beets, washed and trimmed
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 4 cups mixed salad greens
  • 1/2 cup crumbled goat cheese or feta
  • 1/4 cup toasted walnuts or pecans
  • 2 tablespoons balsamic vinegar
  • Optional: fresh herbs (parsley, thyme, or basil) for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wrap each beet in aluminum foil with a drizzle of olive oil, salt, and pepper. Roast for 45–60 minutes, until tender when pierced with a fork.
  3. Allow beets to cool slightly, then peel and slice or cube them.
  4. In a large bowl, toss salad greens with balsamic vinegar, remaining olive oil, salt, and pepper.
  5. Top the greens with roasted beets, crumbled cheese, and toasted nuts.
  6. Garnish with fresh herbs if desired and serve immediately.
