- 4 medium beets, washed and trimmed
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 4 cups mixed salad greens
- 1/2 cup crumbled goat cheese or feta
- 1/4 cup toasted walnuts or pecans
- 2 tablespoons balsamic vinegar
- Optional: fresh herbs (parsley, thyme, or basil) for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Wrap each beet in aluminum foil with a drizzle of olive oil, salt, and pepper. Roast for 45–60 minutes, until tender when pierced with a fork.
- Allow beets to cool slightly, then peel and slice or cube them.
- In a large bowl, toss salad greens with balsamic vinegar, remaining olive oil, salt, and pepper.
- Top the greens with roasted beets, crumbled cheese, and toasted nuts.
- Garnish with fresh herbs if desired and serve immediately.
