  • 1 1/2 lbs (700 g) potatoes, cut into chunks
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • 1 lemon, halved
  • Optional: fresh herbs for garnish

  2. Prepare chicken: Pat the chicken dry. Rub with 1–2 tbsp olive oil, garlic, salt, pepper, paprika, and dried herbs. Place lemon halves inside the cavity.
  3. Prepare potatoes: Toss potato chunks with remaining olive oil, salt, pepper, and a sprinkle of herbs. Arrange around the chicken in a roasting pan.
  4. Roast: Roast chicken and potatoes 1–1.25 hours, or until chicken reaches 165°F (74°C) internally and juices run clear, stirring potatoes halfway for even browning.

Notes
