Description
A deeply flavorful and indulgent French Onion Soup with caramelized onions, rich beef broth, and a cheesy toasted baguette topping. Perfect for cozy dinners or special occasions.

- 5 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp all-purpose flour
- 8 cups beef broth
- 1/2 cup dry white wine (optional)
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- 1 bay leaf
- Baguette slices, toasted
- 1 1/2 cups Gruyère or Swiss cheese, shredded
Instructions
- Melt butter with olive oil in a large pot over medium heat. Add onions, sugar, salt, and pepper. Cook until onions are deeply caramelized, about 35–45 minutes.
- Add garlic and cook for 1–2 minutes more.
- Stir in flour and cook for 1–2 minutes to remove raw taste.
- Gradually add beef broth and wine (if using), stirring constantly. Add thyme and bay leaf. Simmer for 25 minutes. Remove bay leaf.
- Preheat oven broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices, and sprinkle with cheese.
- Broil until cheese is melted and bubbly, about 2–4 minutes. Serve hot.
Notes
For a vegetarian version, use vegetable broth instead of beef broth. Cheese can be Gruyère, Swiss, or mozzarella.
