Description
This Rhubarb Liqueur is a vibrant, homemade spirit blending fresh rhubarb with sugar and vodka for a sweet and tart treat. Perfect for mixing into cocktails or enjoying on its own after a few weeks of infusion.

- 4 cups chopped fresh rhubarb
- 2 cups granulated sugar
- 4 cups vodka (or another neutral spirit)
- 1 teaspoon vanilla extract (optional)
Instructions
- Combine Ingredients: In a large, clean glass jar, add chopped rhubarb and sugar. Stir gently to combine.
- Add Vodka: Pour vodka over the rhubarb and sugar mixture. Stir well to dissolve sugar slightly.
- Seal and Infuse: Seal the jar tightly and store in a cool, dark place for 4–6 weeks. Shake the jar gently every few days to help dissolve sugar and mix flavors.
- Strain and Bottle: After infusion, strain the liquid through a fine mesh sieve or cheesecloth into clean bottles. Discard solids.
- Age (Optional): For smoother flavor, let the bottled liqueur rest an additional 2 weeks before serving.
- Serve: Use chilled as a cocktail ingredient, over ice, or in creative drinks.
Notes
Adjust sweetness by adding more sugar during infusion if desired. You can add a vanilla bean or a cinnamon stick during infusion for added depth of flavor. Store unopened bottles in a cool, dark place.
