These Rhubarb Custard Bars feature a buttery shortbread crust topped with a tangy rhubarb custard filling — a perfect balance of sweet and tart in every bite.

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 2 cups chopped rhubarb
- 3 large eggs
- 1 cup granulated sugar (for custard)
- 1/4 cup all-purpose flour (for custard)
- 1 teaspoon vanilla extract
- Powdered sugar, for dusting (optional)
Instructions
- Preheat Oven & Prepare Pan: Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- Make the Crust: In a bowl, cream together butter, sugar, and 1 cup flour until crumbly. Press evenly into the prepared pan. Bake for 15 minutes until lightly golden.
- Prepare Rhubarb: Spread chopped rhubarb evenly over the warm crust.
- Make Custard Filling: In another bowl, whisk eggs, sugar, 1/4 cup flour, and vanilla extract until smooth.
- Pour & Bake: Pour custard mixture over rhubarb and crust. Bake for 35-40 minutes until set and slightly golden.
- Cool & Serve: Allow to cool completely before slicing. Dust with powdered sugar if desired.
Notes
Use fresh rhubarb for best flavor. Store leftovers refrigerated for up to 3 days.
