  • 1/3 cup granulated sugar
  • 2 cups chopped rhubarb
  • 3 large eggs
  • 1 cup granulated sugar (for custard)
  • 1/4 cup all-purpose flour (for custard)
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat Oven & Prepare Pan: Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. Make the Crust: In a bowl, cream together butter, sugar, and 1 cup flour until crumbly. Press evenly into the prepared pan. Bake for 15 minutes until lightly golden.
  3. Prepare Rhubarb: Spread chopped rhubarb evenly over the warm crust.
  4. Make Custard Filling: In another bowl, whisk eggs, sugar, 1/4 cup flour, and vanilla extract until smooth.
  5. Pour & Bake: Pour custard mixture over rhubarb and crust. Bake for 35-40 minutes until set and slightly golden.
  6. Cool & Serve: Allow to cool completely before slicing. Dust with powdered sugar if desired.
