This Red Velvet Strawberry Cheesecake is the ultimate dessert mashup—featuring a moist red velvet cake base, creamy cheesecake layer, and fresh strawberry topping. It’s rich, vibrant, and perfect for holidays, birthdays, or Valentine’s Day!

Ingredients

Scale
  • For the Red Velvet Cake Layer:
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • 1 tablespoon red food coloring
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vinegar
  • For the Cheesecake Layer:
  • 16 oz (450g) cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Strawberry Topping:
  • 1 ½ cups fresh strawberries, sliced
  • 2 tablespoons strawberry jam or glaze

Instructions

  1. Preheat Oven: Preheat to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment.
  2. Make the Red Velvet Layer: Cream butter and sugar. Add eggs and vanilla, then mix in cocoa powder and red food coloring. Stir in buttermilk, flour, salt, baking soda, and vinegar. Pour into prepared pan.
  3. Make the Cheesecake Layer: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour over red velvet batter and gently smooth the top.
  4. Bake: Bake for 50–60 minutes or until center is set. Cool to room temperature, then refrigerate at least 4 hours or overnight.
  5. Add Strawberry Topping: Toss sliced strawberries with jam or glaze. Spoon over chilled cheesecake before serving.

Notes

Use a water bath while baking for the creamiest texture and to avoid cracking. For extra flair, drizzle with melted white chocolate or pipe whipped cream rosettes around the edges.
