Description

  • 4 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar (for towel)
  • Raspberry Swirl:
  • 1 cup fresh or frozen raspberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • Filling:
  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large bowl, beat the eggs and sugar 3–5 minutes until thick and pale. Mix in vanilla.
  3. Whisk flour, baking powder, and salt. Gently fold into the egg mixture.
  4. Spread batter evenly in the prepared pan and bake for 10–12 minutes.
  5. Dust a clean kitchen towel with powdered sugar. Immediately invert the warm cake onto the towel and peel off parchment. Roll the cake up in the towel and let cool completely.
  6. For the raspberry swirl: heat raspberries, sugar, and lemon juice until thickened. Mash and cool completely.
  7. Whip the cream, powdered sugar, and vanilla until fluffy.
  8. Unroll the cooled cake. Spread whipped cream over the surface and spoon thin lines of raspberry sauce, swirling gently.
  9. Roll the cake back up tightly. Chill 1 hour before slicing.

Notes

For extra holiday flair, dust with powdered sugar or drizzle white chocolate on top. You can use store-bought raspberry jam if you prefer a quicker version. Keeps refrigerated for up to 3 days.
