Raspberry Cream Napoleons are delicate, layered pastries filled with smooth vanilla cream and fresh raspberries. Flaky puff pastry and sweet, tart berries make this an elegant dessert that’s surprisingly easy to assemble.

- 1 package (17.3 oz) frozen puff pastry, thawed
- 1 cup heavy cream
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- 1/2 cup powdered sugar
- 1–2 tbsp milk (for glaze)
- 1 cup fresh raspberries
- Optional: mint leaves for garnish

- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry and cut into rectangles (approx. 3×4 inches). Place on prepared baking sheet.
- Prick each rectangle with a fork to prevent excessive puffing.
- Bake 12–15 minutes until golden brown. Cool completely on a wire rack.
- In a bowl, whip heavy cream with granulated sugar and vanilla until stiff peaks form.
- For glaze, mix powdered sugar with milk until smooth.
- To assemble, spread whipped cream on one pastry rectangle, top with fresh raspberries, then another pastry layer. Repeat for all layers.
- Drizzle top with glaze and garnish with extra raspberries and mint if desired. Serve immediately.
Notes
Use chilled puff pastry for easy handling. Can be prepared a few hours ahead, store unglazed in the fridge and add glaze before serving. For a richer flavor, fold in 2 tbsp cream cheese with whipped cream.
