- 14 oz smoked sausage, sliced
- 1 tbsp olive oil
- 1 small onion, diced
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 cup frozen peas
- Fresh parsley for garnish

- Add sausage and cook until lightly browned.
- Add onion, bell pepper, and garlic. Sauté 2–3 minutes until softened.
- Stir in rice, paprika, oregano, salt, and pepper.
- Pour in chicken broth and bring to a gentle boil.
- Reduce heat, cover, and simmer for 15–18 minutes until rice is tender.
- Stir in peas and cook 2 more minutes.
- Remove from heat and let rest 5 minutes before serving.
- Garnish with parsley and serve warm.
Notes
You can use spicy sausage for extra heat or add a splash of hot sauce. Brown rice will require additional broth and longer cooking time.
