- 1 cup dried red or yellow lentils, rinsed
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 1/2 tsp ground turmeric
- 1 tsp ground cumin
- 1/2 tsp chili flakes (optional)
- 6 cups vegetable broth
- 2 tbsp olive oil or coconut oil
- Salt and black pepper to taste
- Juice of 1/2 lemon
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, garlic, and ginger. Cook for 4–5 minutes until softened.
- Stir in turmeric, cumin, and chili flakes (if using). Cook for 1 minute until fragrant.
- Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes until lentils are tender.
- Season with salt, pepper, and stir in lemon juice. Garnish with fresh cilantro before serving.
Notes
This soup is vegan, gluten-free, and naturally anti-inflammatory thanks to turmeric and ginger. For extra creaminess, blend half the soup before serving.
