Ingredients

  • 1 cup dried red or yellow lentils, rinsed
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 1/2 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp chili flakes (optional)
  • 6 cups vegetable broth
  • 2 tbsp olive oil or coconut oil
  • Salt and black pepper to taste
  • Juice of 1/2 lemon
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, garlic, and ginger. Cook for 4–5 minutes until softened.
  2. Stir in turmeric, cumin, and chili flakes (if using). Cook for 1 minute until fragrant.
  3. Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes until lentils are tender.
  4. Season with salt, pepper, and stir in lemon juice. Garnish with fresh cilantro before serving.

Notes

This soup is vegan, gluten-free, and naturally anti-inflammatory thanks to turmeric and ginger. For extra creaminess, blend half the soup before serving.
