- 1 cup dried green or brown lentils, rinsed
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- 6 cups vegetable or chicken broth
- Salt and black pepper to taste
- 1 bay leaf
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5 minutes until softened.
- Add garlic, cumin, smoked paprika, and thyme. Cook for 1–2 minutes until fragrant.
- Add lentils, broth, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 20–25 minutes until lentils are tender.
- Remove bay leaf. Adjust seasoning, garnish with fresh parsley, and serve hot.
Notes
This quick soup can be prepared in under 30 minutes and is naturally vegan. Add a squeeze of lemon for extra brightness if desired.
