Ingredients

  • 1 cup dried green or brown lentils, rinsed
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 6 cups vegetable or chicken broth
  • Salt and black pepper to taste
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5 minutes until softened.
  2. Add garlic, cumin, smoked paprika, and thyme. Cook for 1–2 minutes until fragrant.
  3. Add lentils, broth, bay leaf, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 20–25 minutes until lentils are tender.
  5. Remove bay leaf. Adjust seasoning, garnish with fresh parsley, and serve hot.

Notes

This quick soup can be prepared in under 30 minutes and is naturally vegan. Add a squeeze of lemon for extra brightness if desired.
