  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • Optional garnishes: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the ground meat, breaking it into small pieces. Drain excess fat if needed.
  2. Add onion and garlic. Sauté until softened, about 3–4 minutes.
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute to release the spices’ aroma.
  4. Add diced tomatoes and beans. Bring to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally.
  5. Adjust seasoning to taste. Serve hot with optional garnishes.

Notes

For extra flavor, add a dash of hot sauce or a pinch of cayenne pepper. This chili can also be made in a slow cooker for a richer taste.
