- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/3 cup pumpkin puree
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 3/4 cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream butter and sugars together until light and fluffy.
- Mix in pumpkin puree and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually combine dry ingredients with wet mixture. Fold in white chocolate chips.
- Chill dough for 30 minutes for best texture.
- Scoop onto baking sheet and flatten slightly.
- Bake for 10–12 minutes. Let cool on sheet for 5 minutes before transferring to a rack.
Notes
These cookies are soft and chewy, not cakey. For extra flavor, toast the white chocolate chips beforehand or add a pinch of clove.
