- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup pumpkin puree

- Preheat oven: 350°F (175°C). Line baking sheets with parchment paper.
- Mix dry ingredients: In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- Cream butter & sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy. Add pumpkin puree, egg, and vanilla; mix until smooth.
- Combine: Gradually add dry ingredients to wet, mixing until incorporated.
- Shape cookies: Scoop dough (about 1–2 tbsp each) and roll into balls. Roll in sugar if desired and place on baking sheet, spacing 2 inches apart.
- Bake: 10–12 minutes until edges are set. Cool on baking sheet 2 minutes, then transfer to wire racks.
- Decorate: Once cooled, optionally drizzle with icing or sprinkle more sugar.
Notes
For softer cookies, do not overbake. You can add chocolate chips, nuts, or a glaze for extra flavor. Store in an airtight container for up to 5 days.
