- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/2 cup unsalted butter, softened
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup canned pumpkin puree
- For the frosting: 8 oz cream cheese, softened; 1/4 cup unsalted butter, softened; 2 cups powdered sugar; 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In a separate large bowl, cream butter, oil, granulated sugar, and brown sugar until light and fluffy. Beat in egg, vanilla extract, and pumpkin puree.
- Gradually mix in the dry ingredients until a soft dough forms.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes until edges are lightly golden. Allow cookies to cool completely.
- For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract and beat until creamy.
- Frost cooled cookies and serve. Store in an airtight container for up to 3 days.
Notes
Optional: Sprinkle with cinnamon sugar before baking for extra sweetness. Frosting can be piped for decorative designs.
