Ingredients

  • 1 tsp baking soda
  • 1/2 tsp baking powder

  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup canned pumpkin puree
  • For the frosting: 8 oz cream cheese, softened; 1/4 cup unsalted butter, softened; 2 cups powdered sugar; 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a separate large bowl, cream butter, oil, granulated sugar, and brown sugar until light and fluffy. Beat in egg, vanilla extract, and pumpkin puree.
  4. Gradually mix in the dry ingredients until a soft dough forms.
  5. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  6. Bake for 10–12 minutes until edges are lightly golden. Allow cookies to cool completely.
  7. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract and beat until creamy.
  8. Frost cooled cookies and serve. Store in an airtight container for up to 3 days.

Notes

Optional: Sprinkle with cinnamon sugar before baking for extra sweetness. Frosting can be piped for decorative designs.
