Ingredients

- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp nutmeg
- ¼ tsp cloves
- 2 large eggs
- 1 cup canned pumpkin puree
- ½ cup vegetable oil
- ¾ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 tsp vanilla extract
For the Streusel Topping:
- ¼ cup all-purpose flour
- ¼ cup brown sugar
- 1 tsp cinnamon
- 2 tbsp cold butter, cubed
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- In a medium bowl, whisk flour, baking soda, baking powder, salt, and spices.
- In another bowl, whisk eggs, pumpkin puree, oil, sugars, and vanilla until smooth.
- Stir dry ingredients into wet until just combined. Do not overmix.
- Pour batter into loaf pan.
- Make the streusel: mix flour, brown sugar, and cinnamon. Cut in cold butter with a fork until crumbly. Sprinkle over batter.
- Bake 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan 15 minutes, then transfer to wire rack to cool completely.
Notes
This bread freezes well! Wrap tightly in plastic wrap and freeze for up to 3 months.
