- 1 teaspoon vanilla extract
- 8 oz mascarpone cheese, softened
- 1 1/2 cups heavy cream, whipped
- 2 cups brewed coffee (cooled)
- 2 tablespoons coffee liqueur (optional)
- 24–28 ladyfinger cookies
- Cinnamon or cocoa powder, for dusting
Instructions
- In a bowl, whisk together pumpkin puree, sugar, pumpkin pie spice, and vanilla until smooth.
- Fold in mascarpone cheese until creamy.
- Gently fold in whipped cream to create a fluffy pumpkin filling.
- In a shallow dish, combine cooled coffee with coffee liqueur (if using).
- Quickly dip ladyfingers into the coffee mixture and arrange in a single layer in a baking dish.
- Spread half of the pumpkin cream mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and remaining pumpkin cream.
- Cover and refrigerate at least 4 hours or overnight.
- Dust with cinnamon or cocoa powder before serving.
Notes
For best results, let the tiramisu chill overnight so the flavors can meld. Use strong brewed coffee for richer taste. Garnish with whipped cream and crushed gingersnaps for extra fall flair!
