  • 1 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, mix pumpkin puree, melted butter, brown sugar, egg, and vanilla until smooth.
  3. In a separate bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to wet ingredients and stir until combined.
  5. Fold in chocolate chips.
  6. Pour batter into prepared pan and spread evenly.
  7. Bake 25–30 minutes or until a toothpick inserted in center comes out clean.
  8. Cool completely before cutting into bars.

Notes

For extra gooey bars, slightly underbake and let cool completely. You can substitute chocolate chips with white chocolate or chopped nuts.
