Description

  • 1 cup pumpkin puree
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan or line with parchment paper.
  2. In a large bowl, mix melted butter, sugar, pumpkin puree, eggs, and vanilla until smooth.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually fold dry ingredients into wet ingredients until just combined. Stir in chocolate chips if using.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out mostly clean.
  7. Cool completely before slicing into squares. Enjoy!

Notes

For a richer chocolate flavor, add 1/4 cup espresso or coffee to the batter. Store brownies in an airtight container at room temperature for up to 3 days.
