Description

Easy and moist pumpkin bars made from cake mix, perfect for fall baking and holiday gatherings.


Ingredients

  • 1 box yellow or spice cake mix (15.25 oz)
  • 1 can (15 oz) pumpkin puree
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp ground cinnamon (optional)
  • 1/2 tsp ground nutmeg (optional)
  • 1/4 tsp salt
  • Optional: cream cheese frosting or glaze for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, combine cake mix, pumpkin puree, eggs, vegetable oil, cinnamon, nutmeg, and salt. Mix until smooth.
  3. Pour batter into prepared baking pan and spread evenly.
  4. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow to cool completely before frosting with cream cheese frosting or drizzling with glaze.
  6. Cut into bars and serve.

Notes

For extra flavor, fold in 1/2 cup chopped nuts or chocolate chips before baking.
