Easy and moist pumpkin bars made from cake mix, perfect for fall baking and holiday gatherings.
Ingredients

- 1 box yellow or spice cake mix (15.25 oz)
- 1 can (15 oz) pumpkin puree
- 3 large eggs
- 1/2 cup vegetable oil
- 1 tsp ground cinnamon (optional)
- 1/2 tsp ground nutmeg (optional)
- 1/4 tsp salt
- Optional: cream cheese frosting or glaze for topping
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, combine cake mix, pumpkin puree, eggs, vegetable oil, cinnamon, nutmeg, and salt. Mix until smooth.
- Pour batter into prepared baking pan and spread evenly.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool completely before frosting with cream cheese frosting or drizzling with glaze.
- Cut into bars and serve.
Notes
For extra flavor, fold in 1/2 cup chopped nuts or chocolate chips before baking.
