- 1 lb smoked or Italian sausage, sliced
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and black pepper, to taste
- Optional garnish: chopped parsley or green onions

- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
- In the same pot, add onion and cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
- Add potatoes, chicken broth, paprika, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer 15–18 minutes until potatoes are fork-tender.
- Stir in milk and heavy cream. Return sausage to the pot.
- Simmer gently 5 minutes. Adjust seasoning as needed.
- Serve hot, garnished with parsley or green onions if desired.
Notes
For a thicker chowder, mash some of the potatoes directly in the pot or add a small cornstarch slurry. This chowder reheats well and thickens as it sits.
