- 3 lbs chuck roast
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp olive oil
- 1 lb baby potatoes, halved
- 4 carrots, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)

- Season roast with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a skillet and sear roast on all sides until browned.
- Place potatoes, carrots, onion, and garlic in the slow cooker.
- Set the roast on top of the vegetables.
- Whisk broth, Worcestershire sauce, tomato paste, thyme, and rosemary.
- Pour mixture over the roast.
- Cover and cook on LOW for 8 hours or HIGH for 4–5 hours.
- Optional: Thicken gravy with cornstarch slurry during the last 15 minutes.
- Slice or shred roast and serve with vegetables and gravy.
Notes
Chuck roast works best for tenderness. Leftovers make excellent sandwiches or tacos.
