  • 3 lbs chuck roast
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 1 lb baby potatoes, halved
  • 4 carrots, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)

  1. Season roast with salt, pepper, garlic powder, and onion powder.
  2. Heat olive oil in a skillet and sear roast on all sides until browned.
  3. Place potatoes, carrots, onion, and garlic in the slow cooker.
  4. Set the roast on top of the vegetables.
  5. Whisk broth, Worcestershire sauce, tomato paste, thyme, and rosemary.
  6. Pour mixture over the roast.
  7. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours.
  8. Optional: Thicken gravy with cornstarch slurry during the last 15 minutes.
  9. Slice or shred roast and serve with vegetables and gravy.

Notes

Chuck roast works best for tenderness. Leftovers make excellent sandwiches or tacos.
