Ingredients

Scale

Ingredients

  • 2 lbs pork shoulder or pork stew meat, cubed
  • 6 slices bacon, chopped
  • 2 tbsp olive oil (if needed)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • 4 cups chicken or pork broth
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

Instructions

  1. Cook bacon: In a large pot or Dutch oven, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving drippings in the pot.
  2. Sear pork: Season pork with salt and pepper. Brown pork in the bacon fat in batches. Remove and set aside.
  3. Sauté vegetables: Add onion, carrots, and celery to the pot. Cook 5–6 minutes until softened. Add garlic and cook 30 seconds.
  4. Build flavor: Stir in tomato paste and flour. Cook 1–2 minutes.
  5. Add liquid: Slowly pour in broth, stirring to avoid lumps. Add thyme, smoked paprika, bay leaf, and browned pork.
  6. Simmer: Cover and simmer on low for 1½–2 hours until pork is tender.
  7. Finish: Stir in cooked bacon. Taste and adjust seasoning.
  8. Serve: Garnish with parsley and serve hot with bread or mashed potatoes.

Notes

For extra depth, add a splash of white wine or apple cider vinegar. This stew tastes even better the next day and freezes well.
