- 2 lbs pork shoulder or pork stew meat, cubed
- 6 slices bacon, chopped
- 2 tbsp olive oil (if needed)
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 tbsp tomato paste
- 2 tbsp all-purpose flour
- 4 cups chicken or pork broth
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1 bay leaf
- Salt and black pepper, to taste
- Fresh parsley, for garnish

- Cook bacon: In a large pot or Dutch oven, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving drippings in the pot.
- Sear pork: Season pork with salt and pepper. Brown pork in the bacon fat in batches. Remove and set aside.
- Sauté vegetables: Add onion, carrots, and celery to the pot. Cook 5–6 minutes until softened. Add garlic and cook 30 seconds.
- Build flavor: Stir in tomato paste and flour. Cook 1–2 minutes.
- Add liquid: Slowly pour in broth, stirring to avoid lumps. Add thyme, smoked paprika, bay leaf, and browned pork.
- Simmer: Cover and simmer on low for 1½–2 hours until pork is tender.
- Finish: Stir in cooked bacon. Taste and adjust seasoning.
- Serve: Garnish with parsley and serve hot with bread or mashed potatoes.
Notes
For extra depth, add a splash of white wine or apple cider vinegar. This stew tastes even better the next day and freezes well.
