- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 carrot, diced
- 1 cup green beans, chopped
- 1 can (15 oz) white beans, drained and rinsed
- 4 cups vegetable broth
- 1 cup diced tomatoes (fresh or canned)
- 1/2 cup small pasta (like ditalini)
- Salt and black pepper, to taste

- 1 cup fresh basil leaves
- 1 clove garlic
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil

- Sauté vegetables: Heat olive oil in a large pot over medium heat. Add onion and cook 4–5 minutes until softened. Stir in garlic, carrot, zucchini, and green beans. Cook 3–4 minutes.
- Add broth and beans: Pour in vegetable broth and diced tomatoes. Stir in white beans. Bring to a boil.
- Add pasta: Reduce heat and simmer 10–12 minutes. Add pasta and cook until tender, about 8–10 minutes more.
- Make pistou: While soup simmers, blend basil, garlic, Parmesan, and olive oil in a food processor until smooth.
- Finish: Season soup with salt and pepper. Spoon pistou into each bowl before serving and stir gently to combine.
Notes
Traditionally served in Provence, this soup can be adapted with seasonal vegetables. For a vegan version, omit Parmesan or replace with nutritional yeast. Leftovers store well in the refrigerator for up to 3 days.
