Description

Inspired by the Pioneer Woman, this Strawberry Rhubarb Pie combines juicy strawberries, tart rhubarb, and a hint of orange zest in a flaky double crust. It’s a sweet and tangy old-fashioned dessert perfect for spring and summer gatherings.

  • 2 1/2 cups hulled and halved strawberries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon orange zest (optional but recommended)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, cubed
  • 1 package (14 oz) refrigerated pie crusts, or homemade double-crust pie dough
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat Oven: Preheat oven to 425°F (220°C). Place a baking sheet on the bottom rack to catch drips.
  2. Prepare Filling: In a large bowl, combine rhubarb, strawberries, sugar, cornstarch, orange zest, lemon juice, and vanilla. Mix well and set aside for 10 minutes.
  3. Assemble Bottom Crust: Roll out one pie crust and fit into a 9-inch pie dish. Pour in the fruit mixture and dot the top with butter.
  4. Top Crust: Roll out the second crust and place over the filling (whole or lattice-style). Crimp the edges and cut slits if using a solid top.
  5. Egg Wash: Brush the top crust with beaten egg and sprinkle with coarse sugar if desired.
  6. Bake: Bake for 15 minutes at 425°F, then reduce oven temperature to 375°F (190°C) and bake an additional 40–45 minutes, or until crust is golden and filling is bubbling.
  7. Cool: Cool at least 3–4 hours before slicing to allow filling to set.

Notes

Place foil on the edges halfway through baking if crust is browning too quickly. Best served with vanilla ice cream or a dollop of whipped cream.
