This Pineapple Rum Sweet Potato Cobbler is a bold twist on a Southern classic. Sweet potatoes and pineapple are spiced and soaked in dark rum, then topped with a buttery cobbler crust and baked to golden perfection. It’s tropical, warm, and comforting all at once.

- 2 medium sweet potatoes, peeled and cubed
- 1 can (15 oz) crushed pineapple, with juice
- 1/4 cup dark rum (optional, or sub with pineapple juice)
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- Pinch of salt
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup self-rising flour
- 1 cup milk (or non-dairy milk)
- Optional: whipped cream or vanilla ice cream, for serving
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish.
- Cook Sweet Potatoes: In a saucepan, boil sweet potato cubes until just fork-tender (about 8–10 minutes). Drain and set aside.
- Mix Fruit Filling: In a large bowl, combine the sweet potatoes, crushed pineapple with juice, rum, brown sugar, cinnamon, ginger, nutmeg, salt, vanilla, and half the melted butter.
- Make Batter: In a separate bowl, mix flour and milk until just combined.
- Layer Cobbler: Pour the fruit mixture into the baking dish. Spoon batter evenly over the top and drizzle with remaining melted butter.
- Bake: Bake for 40–45 minutes, or until the topping is golden and set.
- Cool & Serve: Let cool slightly. Serve warm with whipped cream or a scoop of vanilla ice cream.
Notes
For a non-alcoholic version, skip the rum and add extra pineapple juice. You can also mash some sweet potatoes into the filling for a creamier texture. Best served warm!
